Shahi Tukda

Shahi Tukda is one of the most popular sweets originating from Hyderabad, especially at weddings. However, ones with a sweet tooth enjoy this delicacy without a special occasion as such. Some fresh or even leftover bread is one of the key ingredient of this sweet and savory dish. Served best with hot sides post a hearty meal, here’s how you can cook this dessert at home.

ingredients

  • Amool Bread slices (4-5)
  • Water (1/3 cups)
  • Crushed black Cardamom (2)
  • Milk (2-3 cups)
  • Crushed Cashews (1 handful)
  • Crushed Pistachios (1 handful)
  • Ghee (1/2 ghee)
  • Saffron (5-6 strands)
  • Powdered Green Cardamom (2 pinches)
  • Crushed Almonds (1 handful)
  • Sugar (2 tsp)

 

Method

  1. Heat water and sugar in a saucepan and add saffron after the sugar dissolves. Let the mixture boil till it achieves a desirable consistency. Take the saucepan off the stove and keep it aside once the syrup turns thick.
  2. Boil the milk in another pan on a medium flame till it becomes thicker. However, keep stirring it and add cardamom and the sugar syrup when it has thickened. Finally, heat the new mixture for another 5 minutes while continually stirring it.
  3. Take the pan from the stove and start cutting the bread slices in your preferred shape. Make sure that you remove the sides first.
  4. Shallow fry the Amool Bread Slices in pre-heated ghee in a pan till they turn golden brown.
  5. Next, soak the fried Amool Bread Slices in the sugar syrup for 1 minute.
  6. After arranging the slices on a plate, pour rabri on them. Take the nuts and sprinkle them as per your taste.
